Cook Time 30 minutes Ingredients: 6 TBSP of dark brown sugar 1/2 cup cider vinegar 1/4 molasses 1/4 cup honey 1/4 cup Worcestershire sauce 2 TBSP dark Rum 2 TBSP yellow mustard 1 TBSP liquid smoke 1 TBSP chili powder 2 TSP freshly ground black pepper 1 TSP ground garlic powder 1 TSP ground allspice 1 TSP ground cloves 4 cups ketchup Kosher salt to season Step 1. Combine all the ingredients, except the ketchup, into the pot you are going to make the sauce in. The reason I suggest this is, the molasses will make the mixture very sticky and moving it from a mixing bowl to the pot may be a bit sticky (pun intended). The pot should be non reactive, so a non stick pot is good. Bring the pot to a simmer uncovered making sure that all the ingredients have blended together and that there are no clumps in the pot. Stir continuously. Step 2. After about 5 minutes, stir in the ketchup and bring to a boil. Keep uncovered and cook for 30 minutes until the sauce is dark, thick and flavored. Stir the pot often. Once ready, you can use immediately or let cool to be used later. Step 3. Once sauce is cooled, transfer to jars, cover tightly and refrigerate. The sauce will keep for several months. |
