This is a snack a like to have following a workout. I get my protein, veggies and fruit
One cup of shredded potatoes or hash browns 2 eggs half cup of broccoli or your veggie of choice half a grapefruit
Set the oven to 375 degrees Put the cast iron pan on the stove and let it heat up. Mix up the potatoes with some canola oil. Add the potatoes to the hot pan, stirring for about 3 minutes. Place the pan in the oven, using an oven mitt for 7-10 minutes depending on your oven. After the 7-10 minutes, remove the pan. Crack two eggs onto the potatoes, then place back into the oven. Cook an additional 5-8 minutes, depending on how down you like your eggs.
Remove pan from oven with oven mitt, place on a plate and enjoy.
