two chicken breasts 2 large red potatoes 4 slices of Mango Lemon pepper
Trim any excess fat of the chicken, as well as any film residue. Rinse the chicken off and dry with paper towel.
Heat up Cast Iron 8" skillet with oil Pre heat oven to 375
Place the chicken in the skillet once it has heated up. Sear on both sides, approximately 3 minutes each side. Also sear the ends, holding the chicken with tongs. Once searing is complete, place in oven, uncovered for 15-20 minutes. The internal cooking temp for the chicken, should be 175 degrees.
Heat up a cast iron grill pan with oil. Take the 2 large potatoes and peal off the skin. Using a small corer, core out the potatoes, they will look like little potato logs. Take the 4 mango slices and potato logs and put in a bowl. Mix in some canola oil, salt and pepper, them mix with a spoon. Put the potatoes and mango on the grill pan. Turn the mango's over regularly so they don't burn. But you do want the grill marks showing.
When the chicken is ready, remove the skillet from the oven. Now put the grill pan with the potatoes into the oven for 6-8 minutes to finish cooking. Times will always vary based on different ovens as well as the size of the food portions.
Remove the potatoes when done, place on a paper towel to remove any oil.
