Ingredients: 3 pound Beef Sirlon Tri Tip half cup brown sugar 1 TBSP of ground cumin half TBSP of ground ginger half tbsp curry powder
(Use Kosher salt to rub into the tri tip the night before cooking)
in a bowl mix the brown sugar, ground cumin, curry powder. Mash up the brown sugar so it blends in with other spices Rub the spice blend all over the tri tip. Wrap in foil loosely and place in fridge for a couple of hours.
Take out of fridge prior to cooking, let the meat get to room temp
Grill at 350 degrees, 15 minutes one side, 10-15 minutes other side. Inside temp of steak should be 160 degrees for medium .
Remove from grill when done, let sit for 10 minutes before cooking.
